A collection of over 20 easy, homemade family dinners for busy weekdays. Meal time is important. It’s when we all come together as a family, and sit and discuss our days. I want to know what my daughters did in class that day, and who they played with on the playground. I want to know about the best part of their day, and especially, the worst. I want to sit around the table, with my husband by my side, and support and listen to one another. I want the opportunity to take their hands, and pray together as a family. And, what I don’t want is a busy schedule to take away one of the few chances we actually get to take a seat and be still…together.
School is back in session, and with its arrival invites a slue of after-school and extracurricular activities. As a busy mom, there are certain days I just need to be able to easily slam out a dinner, so the children can move on to whatever sporting event awaits them. However, I don’t want the family table to suffer for it. On weekdays that call for more than just work, school and home, I want meal options that I can prepare with little effort, so that I can take the small amount of time we have at home to focus on more important things — specifically, them.
Sure, there are days we just can’t all make it to dinner at the family table; sometimes obligations don’t allow for it. But, if there’s a way to make it work, I say we at least give it a try. Below is a collection of meals that are weeknight dinner go-tos for me. They are either simple to prepare, require very little prep, quick-cooking or just down-right easy.
