HOW TO MAKE BBQ MEATLOAF
- Make Breadcrumb Mixture - Mix together breadcrumbs, spices, milk, egg, Worcestershire sauce, and liquid smoke in a large bowl.
- Add Beef and Onion - Add the ground beef and onion to the breadcrumb mixture and mix with hands until everything is evenly combined.
- Form Into a Loaf and Add the Glaze - Transfer to a rimmed pan lined with nonstick foil and form into a narrow-shaped loaf. Add about half of the BBQ sauce to the top of the meatloaf.
- Bake - Bake at 350°F for 35 minutes. Then, pour the remaining BBQ sauce across the top of the loaf and bake for 25 minutes more. Allow it to cool for 15 minutes before slicing into.
BYE-BYE, LOAF PAN.
Contrary to what the past might have you believe, meatloaf is better when you ditch the loaf pan altogether. Instead, allow those sides and edges to get a little love, and cook it on a rimmed sheet pan or even in a 9x13" casserole dish. As long as there is room for air to circulate around the loaf, you're good. Leaving the loaf pan in the past will also help it to cook more evenly!
One thing you do want to keep in mind is that the meatloaf is going to spread a little. Therefore, when you are shaping it, you'll want to make it a little more narrow than the width of your average loaf pan.

Keep it classic with a little diced onion. And, by little, I mean lit-tle...as in finely diced. The larger the dice, the longer it takes for the onion to cook. Raw onion -- pungent. Cooked onion -- delicious.

Ingredients
For the Meatloaf
- ยฝ cup plain dried breadcrumbs
- 2 teaspoons Kosher salt
- 1 ยฝ teaspoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- ยพ teaspoon garlic powder
- ยฝ teaspoon onion powder
- ยฝ cup milk
- 1 large egg, beaten
- 1 tablespoon Worcestershire sauce
- 1 ยฝ teaspoon unsalted liquid smoke
- 2 pounds 80/20 ground beef
- 1 small yellow onion, finely minced
For the Topping
- โ cup thick, sweet BBQ Sauce (separated)
Instructions
- Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
- In a large bowl, use a fork to mix together breadcrumbs, salt, chili powder, pepper, cumin, garlic powder, and onion powder. Add the milk, egg, Worcestershire, and liquid smoke and mix once more.
- Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
- Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce and bake an additional 25 minutes.
- Allow the meatloaf to rest about 15 minutes before slicing into. Serve and enjoy!

Oh Boy did I learn a lesson. I made this recipe here in Southern Portugal where I live now. I moved from the US but due to logistics did not bring my American spices. American chili powder is cayenne, garlic, paprika, salt and pepper (usually). European chili powder is 100% chiles!!!
Love this recipe but the spice was so hot tha my ghost pepper loving hubby could barely eat it. I wound up dipping each piece it in greek yoghurt to calm the sting. My lips stung for hrs. after. We had a good laugh about it and will probably make it again with the correction.
Great recipe BUT if you live in Western Europe make your own chili powder so you can actually taste the meatloaf.
