Store-bought breakfast sausage doesn't hold a candle to this homemade Breakfast Sausage Recipe. It is SO EASY and insanely good that you will make it again and again.

For a great way to incorporate protein into your breakfast routine in a way that delivers that savory punch, this recipe is where it's at. I guarantee it is one the whole family will love, too!

BREAKFAST SAUSAGE INGREDIENTS

This is one of those recipes where homemade makes an enormous difference. I'm talking massive--not an understatement!

Juicy pork, sweet brown sugar, the perfect spice blend, and fresh thyme and sage take it to next-level delicious.

This combination of ingredients yields the perfect blend of sweet and savory with just the right amount of spice.

All ingredients for Breakfast Sausage Recipe

Ground Pork: found near other ground meats in the meat department of your grocery store. You can also use ground turkey for a lighter take on a breakfast staple.

Brown Sugar: adds a hint of sweetness. You can use maple syrup in the place of brown sugar, if preferred.

Seasoning: combination of savory dry spices that all can be found on the spice aisle.

Herbs: a pair of two types of fresh herbs that pair particularly well with pork.

You can customize the level of sweet and spice as desired.

BREAKFAST SAUSAGE SEASONING

The dry spices blend consists of Kosher salt, pepper, smoked paprika, garlic powder, onion powder.

Seasoning mix for Breakfast Sausage Recipe

Add a ½ teaspoon of crushed red pepper flakes or a ¼ teaspoon of cayenne pepper to the mix if you'd like to up the heat level.

It can be tempting to leave out fresh herbs in a recipe, but take note, fresh sage and thyme make a world of difference in both flavor and mouthfeel. 

Sausage can be somewhat heavy on the palate, but these fresh herbs lighten up the dish, making it absolutely irresistible.

However, if you're trying to keep this recipe more budget friendly, you can sub in dried herbs instead. For that take, use 1 teaspoon of dried thyme and 1 teaspoon of dried sage.

HOW TO MAKE HOMEMADE BREAKFAST SAUSAGE PATTIES

This Breakfast Sausage Recipe is great to make ahead or to serve right off the stove. Either way, you'll get a decent hit of protein early no matter when you serve up these patties!

MAKE THE SAUSAGE SEASONING

The first thing to do is mix up your simple breakfast sausage seasoning! This seasoning consists of kosher salt, black pepper, smoked paprika, garlic powder, and onion powder. If you don't have smoked paprika, regular paprika is a fine substitute. However, we are partial to the smoked paprika as it adds a great smoky note to this breakfast sausage recipe.

MIX INGREDIENTS

Next, mix the ingredients together. Add your ground pork, sausage seasoning, brown sugar, and freshly chopped herbs to a large bowl and use your hands to mix and combine.

FORM THE PATTIES

To form the patties, divide the meat mixture into eight portions and roll each portion into a ball. Gently form each ball into a disc shape and use your thumb to create a divot in the center.

HOW TO COOK SAUSAGE PATTIES

Place a large skillet over medium heat and add 1-to-2 tablespoons of either canola oil or avocado oil to the pan. We found the oil necessary in recipe testing, even when using a well-seasoned cast iron skillet. It will prevent the sausage patties from burning too quickly.

Cook each sausage patty for about 5 minutes on each side. The sausage is done when the internal temperature registers 160°F.

As soon as your patties have finished cooking, remove them from the stove top and allow them to cool slightly before serving.

WHAT TO SERVE WITH BREAKFAST SAUSAGE

These sausage patties will go well with just about any breakfast food on the planet! We particularly love them on a plate next to homemade buttermilk biscuits and cheesy scrambled eggs.

Or, if you prefer your breakfast on the Southern side, try this sausage with fried eggs, and a bowl of cheesy grits. 

With Christmas just around the corner, these patties would be perfect served with a smoked salmon dip on Christmas morning.

HOW TO STORE BREAKFAST SAUSAGE

All sausages except dry sausage are perishable and must be kept refrigerated or frozen.

REFRIGERATION INSTRUCTIONS

Go ahead and add this Breakfast Sausage Recipe to the early school morning routine, because these patties keep in an airtight container in the fridge for up to 3-4 days.

HOW TO FREEZE BREAKFAST SAUASAGE

If you want to freeze them, place the cooled sausage patties in a freezer container, and they will keep for up to 3 months.

REHEATING INSTRUCTIONS

To reheat, cover with a damp paper towel and microwave for one minute, check the temperature, and microwave in 20-30-second increments until heated to your liking.

Ingredients

  • 2 teaspoons Kosher Salt

Instructions

  • In a small bowl, mix together the salt, pepper, paprika, garlic powder, and onion powder. Set aside.
  • Add the ground pork to a large bowl, followed by the spice mixture, sugar, and fresh herbs. Mix with your hands until well combined and the spices are evenly distributed.
  • Divide the mixture into eight patties, and form them into a disc. Use your thumb to create a divot in the center of each patty. Set aside.
  • Place a large skillet over medium heat and allow to come to temperature. Add the oil and place the patties on the pan, leaving space in between each patty and cooking in batches as necessary.
  • Cook the patties on each side for about 5 minutes until browned and crispy. The patties are done once the internal temperature reaches 160°F. Allow to cool slightly, serve, and enjoy!
