THE INGREDIENTS
Mexican Corn Dip comes together quickly and with great ease! First, you'll whip up that creamy, zesty base, then in goes the good stuff!
FOR THE DIP BASE:
- Cream Cheese
- Sour Cream
- Mayonnaise
- Lime Juice
- Spices (Salt, Garlic Powder, and Pepper)
This is a cream cheese-based dip, making it smooth, rich, and a little tangy. In addition to the cream cheese, sour cream and mayonnaise smooth things out a bit, making it the perfect "dippable" consistency, and a little lime juice brightens up the flavor profile, bringing both zestiness and acidity to the party!

IN A HURRY TO PARTY? CUT BACK...
If you're looking to get this party started right now, there are a few short cuts you can take:
- Cut back on the ingredient list. Although they do add quite a bit of flavor, you can totally get by without the green onions and cilantro.
- You could also cut back on the prep time by swapping out the red bell pepper for a jar of diced pimento peppers instead. Stick with the measurements indicated in the recipe card either way.

LOVE all your delicious recipes! And this one is no exception. I actually heated it up in the oven and sprinkled a bit of cheddar on top - so it got a bit crispy and served it as a hot dip with crackers. SO SO yummy! Another winner in my books! Thanks!

Could you use fresh or frozen corn?
Kelly Anthony says
Hi, Crystal! Yes, you can. If you use fresh corn, you'll probably want to saute it in butter or oil briefly to cook it through a bit. Frozen corn is already somewhat cooked, so you could just let that thaw and then add it to the recipe š

Could you please tell the serving size? I love the nutritional facts but need to know what the serving size is.

This was delicious but VERY salty. I used dukes mayo and the followed the recipe except I used green pepper since I didnāt have red and I used regular seeet onion instead of green onions since I didnāt have those. It was very salty I had to make a 2nd batch without salt to mix with it. Itās still a bit salty. Next time I will omit salt all together. (And I like salty food) lol.
Clare Horne says
I haven't tried it, so I can't comment. My grand children love corn and all cheeses, so could I make the dip with only the cream cheese, sour cream, mayonaise, corn, shreaded cheese, salt and pepper? If so, would the amounts of each stay the same? Thanks so much!
Kelly Anthony says
Hi Claire! Yes, you could do that!
