Old-Fashioned Oatmeal Cookies

HOW TO MAKE OLD-FASHIONED OATMEAL COOKIES

  1. Preheat the oven to 350°F and prep the pans.
  2. Mix the dry ingredients.
  3. Mix the wet ingredients.
  4. Add the dry ingredients to the wet ingredients and mix. Add the oats and mix again.
  5. Scoop the dough and bake for 10 to 12 minutes.

To kick off your Old-Fashioned Oatmeal Cookies, preheat your oven to 350 degrees and have a baking sheet lined with either parchment paper or a silicone baking mat.

It's also a good idea to go ahead and melt your butter at the very start of the recipe. This way, as you are mixing up your dry ingredients and/or waiting on the oven to preheat, your butter will have some time to cool down!

Next, it's on to the dry ingredients. Whisk together the flour, baking soda, salt, and cinnamon. Then, set the dry mix aside and move on to the wet ingredients!

The wet ingredients come together with a mix of melted butter, light brown sugar, and granulated sugar! Add all of these ingredients to a large bowl or to the bowl of your stand mixer.

Use either a stand mixer fitted with a paddle attachment or a handheld mixer and a large bowl to mix up your Old-Fashioned Oatmeal Cookie Dough!

Mix these ingredients together at medium-high speed for about two minutes. Then, add in the egg and vanilla extract and mix until these ingredients are properly mixed in.

At this point, it's time to add in the dry ingredients! With the mixer now on low, add the dry ingredients, mixing all the while.

Before you add the oats, you'll want to take a second to scrape down the sides of the bowl. Scraping down the sides of the bowl ensures that all of your wet and dry ingredients are properly mixed together, and keeps your cookies from baking up with sliding/wonky edges.

After you scrape down the sides of the bowl, mix one more time, and then add in the oats. Mix on low again until the oats are evenly distributed throughout the dough.

Transfer a generous tablespoon of oatmeal cookie dough to the prepared pan and be sure to space each cookie about 2 inches apart so they don't bake into one another!

Bake for about 10 to 12 minutes, then remove the Old-Fashioned Oatmeal Cookies from the oven and transfer to a wire rack to cool slightly. Enjoy with a glass of milk, a cup of coffee, or tea! MELTED BUTTER FOR JUST RIGHT OLD-FASHIONED OATMEAL COOKIES

Many cookie recipes will call for room temperature butter, but I found during recipe testing that melted butter (in combination with using baking soda over baking powder) was actually much better for achieving that crispy cookie rim.

OLD FASHIONED OATS VS. QUICK OATS!

It is important to mention that for Old-Fashioned Oatmeal Cookies, you should most definitely be using old-fashioned oats!

Old-fashioned oats have a good deal of chewy texture to them, and if you were to accidentally use quick oats, it would change the bite of the cookie entirely.

If you'd like to vamp up your Old-Fashioned Oatmeal Cookies, there is certainly more than one way to do it! As mentioned above you could dip them in a vanilla glaze for an extra special iced oatmeal cookie touch.

Oatmeal cookies also pair extremely well with chocolate, and if you'd like to please all the chocolate lovers in your life, feel free to add one cup of semi-sweet chocolate chips to the dough along with the oats!

HOW TO STORE OLD-FASHIONED OATMEAL COOKIES

Your fresh-baked cookies will keep well at room temperature in an airtight container for 3 to 4 days. If you would like for the cookies to stay fresh-tasting longer than this, freeze them!

To freeze Old-Fashioned Oatmeal Cookies, allow them to cool completely and then place them either in a gallon-sized, freezer-safe zip-top bag or in a freezer-safe storage container and seal. Store them in the freezer for up to three months!

Ingredients

For the Cookies:

  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ¾ teaspoon fine sea salt
  • ¼ teaspoon ground cinnamon
  • ⅔ cup unsalted butter, melted and slightly cooled
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups old-fashioned oats

Instructions

  • Preheat the oven to 350°F and have ready a baking sheet lined with either parchment paper or a silicone baking mat.
  • In a small mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside until ready to use.
  • Add the melted butter, light brown sugar, and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. If you don't have a stand mixer use a large mixing bowl and a handheld mixer. Mix on medium-high speed for about 2 minutes. Add the egg and vanilla extract and mix until evenly distributed.
  • Add the dry ingredients and mix on low to combine. Scrape down the sides of the bowl and mix once more. Add the oats and mix on low until evenly distributed.
  • Add a generous tablespoon of batter to the prepared baking sheet, spacing each cookie about 2" apart. Bake for 10-12 minutes. Remove from the oven and place on a cooling rack to cool for about 10 minutes.
