KEEPING COCKTAILS AT HOME SIMPLE
Pineapple Mojitos are extremely easy to make, and the only ingredient that differentiates a pineapple Mojito from a classic Mojito cocktail is the pineapple juice. There is no need to whip up a homemade pineapple syrup from scratch or even muddle mint leaves! We like to let the ice and a good shake do our muddling for us and your standard, store-bought pineapple juice gets the job done perfectly.

PINEAPPLE MOJITO INGREDIENTS
For this Pineapple Mojito Recipe, you will need the following ingredients:
Fresh Mint | Fresh mint is what makes a Mojito a Mojito. Plain and simple, you can't make this cocktail without it. You will need about â…“ cup of mint leaves per pineapple Mojito, so make sure you have plenty on hand!
White Rum | White rum has a light, sweet flavor as opposed to dark rum, which has a much deeper, almost molasses-like flavor. White rum is much better suited for making Mojitos, as this classic cocktail rules supreme when it comes to light and refreshing cocktails.
Pineapple Juice | As mentioned above, there's no need to whip up a homemade pineapple syrup or spend the big bucks on specialty ingredients. Good ol', standard pineapple juice will do the trick just fine, and add plenty of pineapple flavor to your Mojitos!
Lime Juice | Just like with fresh mint, there are no exceptions when it comes to fresh lime juice in cocktails. It is a major difference-maker! You will need one lime per mojito.
Simple Syrup | Simple syrup is a sweetener often used in cocktails. It is one part water and one part sugar, and it's very easy to make at home. However, it is also a budget-friendly ingredient you can easily find in the drink section of your grocery store or at just about any liquor store.
Club Soda | Part of what makes a Mojito so light and refreshing are those crispy little bubbles! You can use soda water or sparkling water to add carbonation to your pineapple Mojitos.
HOW TO MAKE A PINEAPPLE MOJITO
You can either whip up your pineapple Mojitos in a shaker or in a mason jar. My personal preference is the Mason jar because it all goes down in one vessel and there is no straining involved. However, if the thought of a mint leaf hitting your lips is bothersome to you, you are much better off using the cocktail shaker!
Regardless of whether you're using a cocktail shaker or a mason jar to whip up your Mojitos, you'll begin by filling the vessel at least halfway full of ice. Then, you'll add the pineapple juice, lime, mint leaves, rum, and simple syrup. Pop the lid on tight and shake vigorously for about 30 seconds.
If you were using a shaker, strain your pineapple Mojito into a tall glass filled with ice and add club soda to fill to the top. If you used a mason jar to shake up your pineapple Mojitos, remove the lid add a bit more ice if desired, and fill to the top with club soda.
Garnish your cocktail with fresh mint, a lime wedge, lime wheel, fresh pineapple wedges, or pineapple chunks, and enjoy!
HOW TO CUT A LIME WHEEL
To cut a lime wheel, you will call upon your paring knife. Then, place the lime on your cutting board and begin slicing it into ¼"-thick rounds. Once you have all of your wheels cut, lay a stack of two or three lime wheels on top of one another, and use your paring knife to cut a slit from the center of the lime wheel through the rind.

Pineapple Mojitos
Ingredients
- â…“ cup mint leaves, plus extra for garnish, if desired
- 2 ounces white rum
- 3 ounces pineapple juice
- 1 ounce fresh lime juice
- ½ ounce simple syrup
- 1-2 ounces club soda or sparkling water
Instructions
- Add the mint leaves, rum, pineapple juice, lime juice, and simple syrup to a shaker filled at least halfway with ice. You could also use a mason jar equipped with a lid.
- Seal the container and shake vigorously for about 30 seconds.
- If using a shaker, strain into a 12 to 16-ounce glass filled with ice. If using a mason jar, top off with more ice if desired. Pour soda water over the top to fill and stir. Garnish with mint leaves, if desired, serve, and enjoy!
