HOW TO MAKE EASY CREAMED CORN WITH CREAM CHEESE
- Melt the butter and cream cheese together.
- Add the milk, sugar, salt, and pepper.
- Add the corn and simmer.
- Transfer half of mixture to blender or food processor and pulse.
- Return to saucepan, stir and serve!

However, do not attempt to freeze Creamed Corn. While corn itself freezes fine, the sauce may not. It consists mostly of dairy, and items containing a fair amount of dairy will often separate if frozen and then reheated.

- ½ cup unsalted butter
- 1 (8 ounce) package of cream cheese room temperature, cut into chunks
- 2 cups whole milk warmed
- 4 teaspoons granulated sugar
- 1 ½ teaspoon Kosher salt
- ½ teaspoon black pepper
- 4 ½ cups frozen corn thawed (or canned corn, drained)

Melt the butter in a large saucepan over medium heat. Add the cream cheese and the milk, and stir often until the creamed cheese has melted, 6-8 minutes. Add in the sugar, salt, and pepper.

Add the corn, reduce the heat to maintain a simmer, and allow to simmer for 15-20 minutes, until the mixture has thickened slightly. Stir often, and do not allow the mixture to boil

Ladle 2 cups of the creamed corn into a blender or food processor and pulse 2-3 times. Pour back into the pan, stir and serve immediately.

I had some creamed corn at a restaurant that used mascarpone, would that be an ok substitute for the cream cheese? I absolutely loved it and am trying to find a recipe that would be similar. I think they used heavy cream as well.

I'm not sure if the Marscapone would break at a simmer or not. I would think if you left out the cream cheese, subbed in the cream for milk, proceeded with the recipe as directed from there, and THEN stirred in the mascarpone at the end, it might just work 😉 Enjoy!

Just throw everything in the pot at once, heat until all is melted, throw a lid on it and serve when ready. I use 1 can of corn a half pack of cream cheese a tablespoon of butter and salt&pepper. Nothing fancy.

I've made this a few times and now it is a family requirement for big dinners. I didn't change anything in the recipe, but I did add a crust made out of 50/50 panko bread crumbs & Parmesan Reggiano, and enough olive oil to wet the mixture. Spread it on top and broil it until it is golden brown.
