In The Anthony Kitchen's bakery days, I would often create a new cookie to add to the menu during the holiday seasons. On a quest to create the perfect Valentine's Day sandwich cookie, I stumbled upon these little chocolate wafers. It turned out, this was a cookie that didn't necessarily need a filling, and could most certainly stand on its own. It was a cookie that boasted big chocolate flavor, somewhat similar to an oreo -- only much, much better.
The cookie dough began with melted chocolate on the stovetop and ended with a luxurious roll in sparkling sugar; one of my favorites. Sparkling sugar bakes up beautifully and provides an extra added crunch at the end. Then off to the oven, these little gems went to undergo their final transformation. When they came out, they were crisp, crunchy, and terribly addictive in nature. Absolutely, positively everything a chocolate wafer cookie should be.
Now while this little cookie was created with Valentine's Day in mind, I couldn't help but envision them as beautifully packaged Christmas gifts. However, if you should choose to sandwich them around a homemade raspberry filling, you can get that recipe here.

Sparkling Chocolate Wafer Cookies
Ingredients
- 1 cup unsalted butter
- 4 ounces semi-sweet chocolate finely chopped
- 2 cups all-purpose flour
- ยฝ cup of cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon fine sea salt
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- ยฝ cup decorative sparkling sugar optional
Instructions
- Preheat the oven to 350° and have ready a sheet pan lined with either parchment paper or a silicone baking mat.
- In a small saucepan over medium heat melt together butter and chocolate, stirring often. Remove from the heat as soon as chocolate has melted and set aside to cool.
- In a medium-sized mixing bowl, whisk together flour, cocoa powder, baking soda and sea salt. Set aside until ready to use.
- In the bowl of a stand mixer fitted with a paddle attachment, add the sugar and egg. Mix on medium-high speed for about 3 minutes. If you do not have a stand mixer, use a large mixing bowl and a handheld mixer. Add the vanilla extract and mix again. With the stand mixer on low, slowly drizzle in the melted butter and chocolate. Add the dry ingredients gradually, and mix until combined.
- Have ready a small bowl of decorative sugar, if using. Roll a generous tablespoon worth of batter in the palm of your hand and press slightly to flatten. Roll the top in the decorative sugar and bake 10-12 minutes.
