STRAWBERRY COBBLER INGREDIENTS
- Strawberries - This Strawberry Cobbler is made using fresh strawberries. You will need 3 (16-ounce) packages for this recipe. The Kitch'n recommends looking for bright red strawberries with a deep red hue to them. However, be sure to check the bottom of the packages before adding them to your basket to avoid purchasing mushy or moldy strawberries.
- Granulated Sugar
- Cornstarch - Cornstarch serves as the thickener for the strawberry filling.
- Flour - Flour will be used to make the sweet biscuit topping. Use only all-purpose flour.
- Baking Powder and Baking Soda - Baking powder and baking soda are both chemical leaveners, but they are not the same thing. Make sure you use the indicated quantity for both and don't mix them up!
- Butter - Use only unsalted butter. With salted butter, you're topping would be far too salty. Regardless of the brand, unsalted butter often times has the color blue on the packaging, whereas salted butter features red.
- Buttermilk - Buttermilk will not only add more flavor to your Strawberry Cobbler's biscuit topping, but it will also make it extra tender as well. For best results, use buttermilk, however, if you are without, you can sub in whole milk with a tablespoon of freshly squeezed lemon juice mixed in.
HOW TO MAKE STRAWBERRY COBBLER
- Prep - Wash and dry your strawberries. Then, hull and cut them into slices. Have ready a greased casserole dish, and don't forget to preheat the oven!
- Make the Filling - Add 1 cup granulated sugar, corn starch and a pinch of salt to a large mixing bowl and stir to combine. Add the strawberries and stir until evenly coated with the sugar mixture. Transfer to the casserole dish and set aside.
- Make the Biscuit Topping - Make the sweet biscuit topping for your Strawberry Cobbler! You'll start by mixing the dry ingredients. Then, cut in the butter, add the buttermilk and stir. Gently knead if necessary to bring the dough together. The biscuit mixture will feel wet and a little sticky. See below if you have a food processor!
- Cut the Biscuits - Have ready a floured work surface and transfer the dough to it. Dust the dough generously with flour and roll it out until about ยพ" thick. Cut the biscuits using a round biscuit or cookie cutter. Preferably, it would be about 2 ยฝ" in diameter.
- Assemble, Bake and Cool - Add the biscuits evenly across the top of the strawberries and bake for 40 minutes. If you'd like for your Strawberry Cobbler to properly thicken, allow about 45 minutes to an hour before serving.

Strawberry Cobbler
Ingredients
- 1 ยผ cup granulated sugar, separated
- 3 tablespoons cornstarch
- ยฝ teaspoon fine sea salt, plus a pinch
- 3 (16 ounce) packages of strawberries hulled and cut into ยผ" slices
- 2 ยผ cup all-purpose flour
- 2 teaspoons baking powder
- ยฝ teaspoon baking soda
- ยพ cup very cold, unsalted butter, cut into small cubes (do NOT use salted butter)
- ยพ cup buttermilk
Instructions
- Place a rack in the center of the oven and preheat the oven to 350°. Also, have ready a greased casserole dish.
- Add 1 cup granulated sugar, corn starch and a pinch of salt to a large mixing bowl and stir to combine. Add the strawberries and stir until evenly coated with the sugar mixture. Transfer the mixture to the casserole dish and set aside.
- If you have a food processor, see notes below. Otherwise, proceed with the recipe. In a large mixing bowl, whisk together flour, ยผ cup sugar, baking powder, baking soda, and ยฝ teaspoon salt.
- Add the cubed butter and stir. Using a pastry blender, cut the butter into the flour mixture until it resembles small broken up peas. Add the buttermilk and stir until evenly distributed throughout the batter.
- Very gently, knead the dough, just until it comes together in a ball. Transfer to a lightly flour floured work surface, add a dusting of flour to the top of the dough and pat (or roll out) the dough out until it ยพ" thick. Cut the dough into circles using a biscuit cutter, preferably about 2 ยฝ" in diameter. You should have about 10 biscuits.
- Place the dough rounds evenly across the top of the strawberry mixture and bake for 40 minutes.
- Remove the cobbler from the oven. If you'd like your cobbler to thicken up before serving, allow it to cool for about 45 minutes to an hour.
