SLOWLY, ADD THE MILK ONE SPLASH AT A TIME UNTIL A PUDDING-LIKE CONSISTENCY.  THEN, ADD THE REMAINING MILK AND STIR.

SIMMER THE MILK FOR ABOUT 5 MINUTES. REDUCE THE HEAT TO LOW AND ADD THE CHEESES. STIR UNTIL MELTED.
