Add onion, garlic, and bay leaves to the slow cooker. Rub your chuck roast with chopped chipotle peppers, salt, pepper, cumin, paprika, and oregano and transfer to the slow cooker. Cook 6-8 hours.
Once the beef is tender, shred it and add in lime juice and chopped cilantro.
Serve on warm corn tortillas, with white onion, cilantro, and a squeeze of lime. Enjoy!
