CAST IRON FILET MIGNON

PAT THE STEAKS DRY WITH A PAPER TOWEL.  SET THEM  OUT AT ROOM TEMPERATURE FOR 20 MINUTES. DRIZZLE WITH OIL...

.... AND SEASON WITH SALT AND PEPPER.

HEAT A CAST IRON SKILLET ON HIGH HEAT FOR 2 MINUTES.  THEN, ADD THE OIL AND PLACE THE STEAKS DOWN.  COOK FOR 3 MINUTES ON EACH SIDE.

PLACE THE CAST IRON SKILLET IN THE OVEN.  4 MINUTES FOR MEDIUM RARE, 5 MINUTES FOR MEDIUM, AND 6-7  MINUTES FOR WELL DONE.

TOP WITH BUTTER AND ALLOW TO REST FOR 10 MINUTES.
