COMBINE THE CRAB, PARMESAN CHEESE, BREADCRUMBS, MAYONNAISE, BEATEN EGG, GREEN ONIONS, PIMENTO PEPPERS, PARSELY, OLD BAY SEASONING, LEMON ZEST AND JUICE.

GENTLY, FOLD THE INGREDIENTS TOGETHER.

DIVIDE THE CRAB MIX INTO QUARTERS AND FORM 1/2 THICK PATTIES. TRANSFER TO A FLAT PLATTER AND CHILL IN REFRIGERATOR FOR 30-60 MINUTES.

ADD OIL TO A LARGE SKILLET OVER MEDIUM HEAT.  COOK PATTIES 3-4 MINUTES ON EACH SIDE.
