EGGS IN PURGATORY

ADD THE OIL TO AN OVEN-SAFE SKILLET AND BRING TO TEMPERATURE.  SAUTE ONION FOR 4 MINUTES AND THEN ADD GARLIC AND COOK FOR AN ADDITIONAL 1 MINUTE.

TO THAT ADD:

CRUSHED TOMATOES SALT CRUSHED RED PEPPER PAPRIKA  HALF OF BASIL

STIR AND ALLOW TO SIMMER FOR 10 MINUTES. REDUCE THE HEAT, ADD THE BUTTER AND STIR.

USING A SPOON CREATE A SMALL DIVOT IN THE SAUCE AND ADD THE EGGS.  TRANSFER TO THE OVEN AND BAKE FOR 8 MINUTES.
