Oatmeal

Cream Pies

 Blend oats, flour, cornstarch, baking soda, salt, and cinnamon in a food processor.

Cream butter, brown sugar, and granulated sugar until light and fluffy.

Add eggs,  molasses, and vanilla. Mix once more.

Combine wet and dry ingredients.

Drop tablespoon-sized scoops of batter onto the baking sheet, and bake for 10-12 minutes.

Add butter, marshmallow fluff, powdered sugar, vanilla extract, and sea salt to a mixing bowl and mix until smooth.

Turn half of the cookies bottom-side up and add a generous tablespoon of filling to the center.

Top with the remaining cookies and press down gently until the filling reaches the edges. Allow to set for 1-2 hours.
