TRUSS THE TENDERLOIN SO THAT IT IS OF EVEN THICKNESS.

DRIZZLE THE TENDERLOIN WITH CANOLA OIL AND RUB IT EVENLY ACROSS.

SPRINKLE WITH FRESH CRACKED PEPPER AND SALT, AND RUB THE TENDERLOIN ONCE MORE. PLACE ON A ROASTING RACK IN THE OVEN FOR 40 MINUTES.
