SCALLOPED POTATOES AND HAM

INGREDIENTS:

CHOPPED HAM DICED ONION CHEESE RUSSET POTATOES BUTTER MILK FLOUR SALT AND PEPPER

MELT THE BUTTER IN A SAUCEPAN.  AS SOON AS IT IS MELTED ADD THE ONION AND COOK FOR 5-7 MINUTES.

SPRINKLE THE FLOUR OVER THE ONIONS AND STIR UNTIL COATED.

ADD THE MILK ONE SPLASH AT A TIME, WHISKING AFTER EACH ADDITION. SIMMER 5-7 MINUTES, UNTIL SLIGHTLY THICKENED.

REMOVE FROM THE HEAT AND STIR IN THE CHEESE, SALT AND PEPPER.

RINSE, PEEL AND SLICE THE POTATOES INTO 1/8 SLICES.

ADD HALF OF THE POTATOES, HALF OF THE SAUCE AND HALF OF THE HAM TO A CASSEROLE DISH.

REPEAT THE LAYERS ONCE MORE IN THE SAME ORDER.  THEN TOP WITH THE REMAINING CHEESE  AND COVER WITH FOIL.

BAKE AT 375 FOR ONE HOUR.  REMOVE FOIL AND BAKE FOR ANOTHER 20-25 MINUTES. SPRINKLE WITH PARSLEY AND ALLOW TO COOL.
