SHRIMP QUESADILLA 

CHOP THE SHRIMP INTO SMALLER PIECES AND ADD TO A BOWL.  STIR IN CHILI POWDER, GARLIC POWDER, SALT AND PEPPER

ADD OIL TO A PAN AND LET IT COME TO TEMPERATURE.  ADD IN THE ONION AND JALAPENO AND COOK FOR 3 MINUTES.

NOW, ADD THE SHRIMP AND COOK FOR AN ADDITIONAL 6 MINUTES, STIRRING OFTEN.

ADD A SCANT OF OIL TO A CLEAN PAN AND THEN ADD THE TORTILLA FOLLOWED BY THE CHEESE AND SHRIMP.

ONCE THE CHEESE STARTS TO MELT, USE A SPATULA TO TO FOLD THE SIDE WITH CHEESE.  HOLD THE QUESADILLA DOWN WITH THE SPATULA UNTIL IT IS MELDED TOGETHER.
