TINGA DE POLLO 

BLEND SAUTEED ONION AND GARLIC, CRUSHED TOMATOES, CHIPOTLE, AND SPICES.

POUR SAUCE INTO PAN, ADD CHICKEN, AND COOK OVER MEDIUM HIGH WITH LID AJAR FOR 45-50 MINUTES, TURNING THE CHICKEN HALFWAY THROUGH.

ONCE THE CHICKEN IS COOKED THROUGH, REMOVE IT FROM THE SAUCE AND ALLOW TO COOL.  SHRED IT WITH TWO FORKS OR WITH FOR YOUR HANDS.

THEN RETURN THE SHREDDED CHICKEN BACK TO THE SAUCE AND ALLOW TO SIMMER FOR 15-20 MINUTES.
