SET THE STEAKS OUT AT ROOM TEMPERATURE FOR 30 MINUTES. THEN, PREPARE YOUR GRILL TO MEDIUM HIGH HEAT.

 WHILE YOU'RE WAITING ON THE GRILL, PAT YOUR STEAKS DRY, DRIZZLE THEM WITH OIL, AND  SEASON THEM.

ADD STEAKS TO HOT GRILL. FOR MEDIUM RARE, COOK DIRECTLY OVER THE FIRE FOR 4 MINUTES ON EACH SIDE.

LET THE STEAK REST FOR 5 MINUTES BEFORE CUTTING.
