A recipe for Watermelon Arugula Salad with feta featuring cubed watermelon, arugula, cucumbers and serrano-lime vinaigrette to top it all off!

For the Serrano-Lime Dressing:
  • 1/4 cup Fresh Cilantro chopped
  • 3 Serrano Peppers seeded and diced
  • 1 Shallot chopped
  • 1 Clove of Garlic chopped
  • 2 teaspoons Honey
  • Juice of 2 Limes
  • 1/3 cup Olive Oil or Canola Oil
  • 1/4 teaspoon Kosher salt
For the Salad:
  • 6 cups Baby Arugula washed and dried
  • 3 cups Watermelon cut into 1/2" cubes
  • 1 English Cucumber sliced thin
  • 1/3 cup Feta crumbled
  • 2 tablespoons Pepitas Pumpkin Seeds
  1. Add all ingredients for the dressing, except for the olive oil, into a blender or a food processor and puree. With the motor running, drizzle in the olive oil. Set aside until ready to serve. 

  2. Toss together ingredients for the salad, drizzle with Serrano-Lime dressing and sprinkle with salt and pepper. Serve immediately.
