A kid-friendly pasta salad (without mayo!): Tortellini pasta salad loaded with green vegetables and Cheddar cheese.
Add just under a 1/2" of water to a large saucepan, and place steamer basket inside of saucepan. If water comes over the steamer basket, remove and discard of water until the bottom of the steamer basket is no longer touching the surface of the water. Place over medium-low heat, and add the frozen broccoli. Cover with lid, and allow to steam for 12 minutes, or until the broccoli is tender enough to easily pierce with a fork. Remove the lid and set aside to cool.
Once the pasta and vegetables have cooled, transfer to a large mixing bowl, and add the broccoli and the Cheddar cheese. Drizzle with Italian dressing, sprinkle with salt (if using) and toss until all of the ingredients are evenly coated. Serve right away, or store in an airtight container in the refrigerator for up to 4 days.
