Ingredients
For the Snickerdoodle Topping:
2tablespoonsgranulated sugar
½teaspoonground cinnamon
For the Blondies:
1 ⅓cup all-purpose flour
1teaspoon baking powder
1teaspoonfine sea salt
¼teaspoonground cinnamon
⅔cupunsalted butter, melted(about 10 tablespoons)
½cup + 2 tablespoonsgranulated sugar
1large egg
1egg yolk
2teaspoonpure vanilla extract
Instructions
Preheat the oven to 350° and have ready a greased 8"x8" baking dish.
In a small bowl, stir together the topping -- 2 tablespoons of granulated sugar and a ½ teaspoon ground cinnamon. Set aside until ready to use.
In a medium-sized mixing bowl, whisk together the flour, baking powder, sea salt, and ¼ teaspoon cinnamon. Set aside until ready to use.
In a large mixing bowl, mix together melted butter, ½ cup + 2 tablespoons granulated sugar, egg, egg yolk, and extract until well combined. Add the dry ingredients and mix with a sturdy spoon until the dough comes together. Do not overmix.
Transfer the dough to the baking dish and spread evenly from edge to edge. Sprinkle the topping over the dough and bake for 22-24 minutes.
