Ingredients
2tablespoonsavocado or canola oil
1(14-ounce) packagekielbasa sausages, sliced at ¼" bias
1red or yellow onion, diced
2clovesgarlic, chopped
1small head of green cabbage, chopped into 1" pieces
1 ½tablespoonsred wine vinegar
1teaspoonKosher salt
¾ teaspoonblack pepper
2tablespoonsfresh chopped Italian parsley (optional)
Instructions
Add the oil to a large fry pan (one you have a lid for) over medium heat and allow it to come to temperature. Add the sausage slices and cook for 3 minutes on each side until slightly browned on the edges. Remove from the pan using a slotted spoon or tongs and set aside.
Add the onion to the pan and stir to coat in the sausage drippings left behind. Sauté for about 3-4 minutes, until softened. Add the garlic, cabbage, red wine vinegar, salt, and pepper and stir to combine.
Reduce the heat to medium-low and place the lid on the pan. Cook for about 8-10 minutes, lifting the lid to stir every few minutes or so.
Once the cabbage has softened and is tender to your liking, return the sausage to the pan, garnish with parsley (if desired), serve, and enjoy!
