Ingredients
For the Chow Mein Sauce:
3tablespoonssoy sauce
2tablespoonsoyster sauce
2tablespoonsgranulated sugar
1 ½ teaspoonsesame oil
For the Chicken Chow Mein:
1 ½poundboneless, skinless chicken thighs
2tablespoonsavocado or canola oil
1 ½teaspoonKosher salt
1teaspoon black pepper
1red bell peppercored, thinly sliced -- then cut the slices in half
1cupjulienned (or matchstick) carrots
1yellow onionhalved and thinly sliced
1 ½cupthinly sliced cabbage
2clovesgarlic, minced
1(6-ounce) packagechow mein stir-fry noodlescooked according to package directions
¼cupchopped cilantro
4green onions, sliced
Instructions
Add all of the sauce ingredients to a small bowl and whisk to combine. Set aside until ready to use.
Pat the chicken dry with a paper towel and using a sharp knife, cut the chicken against the grain into thin strips (about a ½" thick). Transfer to a bowl and season with Kosher salt and pepper. Massage the seasoning evenly onto the chicken and set aside.
Add oil to a large sauté pan over medium-high heat and bring to temperature. Add the chicken to the pan and sear for 4 minutes. Turn the chicken and sear minutes more. Remove from the pan and set aside on a plate.
Add the bell pepper, carrots, and onions to the pan and sauté for 5 minutes, stirring often. Then, add the cabbage and sauté for 2 minutes more. Add the garlic and sauté 1 minute more.
If your pan is large enough to house all of the ingredients, add the chicken, the noodles, cilantro, green onion, and sauce and toss to combine. If your pan is not large enough, see notes.
Notes
If your pan is large enough to house all of the ingredients, transfer the contents from the pan to a large mixing bowl, along with the chicken, the noodles, cilantro, green onion, and sauce. Toss to combine.
