Ingredients
¼cuptarragon vinegar
3tablespoonsDijon mustard
1tablespoongranulated sugar
½teaspoonkosher salt
¼teaspoonblack pepper
1clovegarlicfinely grated
⅔cupolive oil
Instructions
Add the tarragon vinegar, Dijon mustard, sugar, salt, pepper, and grated garlic to a medium bowl. Whisk until well combined.
Slowly drizzle in the olive oil while whisking constantly. Continue whisking until the dressing is smooth and emulsified.
Serve immediately or transfer to an airtight container and refrigerate until ready to use.
Notes
Makes about 1 ¼ cups.Storage: Store Dijon dressing in an airtight container in the refrigerator for up to 5 days. Whisk or shake well before serving. If the olive oil thickens in the refrigerator, allow the dressing to sit briefly at room temperature. If needed, whisk in about 1 tablespoon of water to loosen the consistency.Tarragon Vinegar Substitute: White wine vinegar can be substituted for tarragon vinegar, although the dressing will lose some of its subtle herbaceous flavor.
