Ingredients
2tablespoonsmayonnaise
2clovesgarlicminced
Zest of a lemon
1teaspoonlemon juice
½teaspoonfine sea salt
¼teaspoonblack pepper
1 ½poundcod fillet
2teaspoonsminced Italian parsley
Instructions
Preheat the oven to 375° and have ready a rimmed sheet pan lined with parchment paper.
Run your fingers along the fillet, checking for any missed pin bones. If found, remove using a pair of kitchen tweezers. Pat the fillet dry using a paper towel, and transfer to the baking sheet.
In a small mixing bowl, stir together the mayonnaise, garlic, lemon zest and juice, salt and pepper. Rub the mayonnaise mixture all of the fillet. Bake for 25-30 minutes, or until the fish is opaque and flakes easily using a fork . Cook time will vary depending on the thickness of the fillet -- for a thicker fillet, bake longer, and for a thinner fillet, bake for less time. Remove from the oven, sprinkle with parsley to garnish and serve.
