Ingredients
2slices thick-cut bacon
2large eggs
⅓cupfreshly grated Mild Cheddar or American Cheese
2 slices white or wheat bread, toasted
Instructions
Add the bacon to a small or medium-sized fry pan over medium-high heat and cook for about 3 minutes, turn, and cook for 3-5 minutes more, until done to your liking.
Remove the bacon and set it aside on a paper towel-lined plate to drain. Crack the eggs one at a time into a small bowl and gently pour into the pan.
Allow the eggs to sit, undisturbed for about 2-3 minutes, until the white turns opaque and begins to curl up on the edges. Remove from the pan now for sunny side-up eggs.
For over easy or medium eggs, gently slide a thin, flexible spatula underneath the eggs and carefully flip them one at a time.
Allow the eggs to cook for another 1-3 minutes, depending on how done you like your yolks. Remove the pan from the heat.
Place the cheese on your toast and top with the hot eggs and bacon slices. Finish your sandwich with the second piece of toast, cut in half if desired, and enjoy.
