Ingredients
¼cupunsalted butter
216-ounce cans of corn, drained
1jalapeñoseeded and diced
1cloveof garlicminced
6ouncescream cheese cut into cubes, room temperature
¼cupsour cream
2 tablespoonsmayonnaise
Juice of 2 limes
2teaspoonsgranulated sugar
½teaspoonKosher salt
½teaspoonchile powder
¼teaspoonsmoked paprika
2tablespoonscotija cheese
1tablespoonchopped cilantro
1tablespoonfreshly chopped green onions
Sprinkle of Tajin for garnish, if desired
Instructions
Add the butter to a large sauté pan over medium-high heat. As soon as the butter has melted, add the corn and chopped jalapeño.
Sauté, stirring often, for about 4-5 minutes. Add the garlic, stir, and cook 1 minute more.
Reduce the heat to medium-low. Add the cream cheese, sour cream, mayonnaise, lime juice, sugar, salt, chile powder, and paprika. Stir until the cream cheese is smooth and melted.
Remove from the heat and garnish with cotija cheese, cilantro, green onion, and Tajin, if desired. Serve with tortilla chips or Fritos and enjoy!
