Ingredients
FOR THE COOKIE:
3cupsall-purpose flour
1teaspoonbaking powder
1 ¼teaspoonfine sea salt
1 ¼cupunsalted butterroom temperature
1 ¼cupgranulated sugar
2large eggs
2teaspoonsvanilla extract
2cupscolored jimmies sprinkles, separated
Instructions
METHOD:
Preheat the oven to 375°F and prepare a baking sheet lined with parchment paper or a silicone baking mat.
In a medium-sized mixing bowl, whisk together the flour, baking powder, and salt. Set aside until ready to use.
Add the room-temperature butter to the bowl of a stand mixer fitted with a paddle attachment. Begin mixing on medium-high speed. If you do not have a stand mixer, use a large mixing bowl and a handheld beater. With the mixer running, slowly add the sugar and mix for about 2-3 minutes, until light and fluffy. Then, add the eggs one at a time, followed by the vanilla extract.
Turn the mixer down to low, and gradually add the dry ingredients. Mix until combined. Add 1 cup of sprinkles and mix once more. Add the remaining cup of sprinkles to a small bowl and set aside.
Scoop about 2 tablespoons worth of dough, and form into a round. Gently press the top and sides of the dough round into the sprinkles to adhere, and set them on the baking sheet (sprinkle-side up) spacing them each at least 2” apart.
Bake for 12 minutes and transfer to a wire rack to cool slightly. Serve and enjoy!
