Ingredients
1(12 ounce)package extra wide egg noodles
1pound80/20 ground beef
2teaspoonsKosher salt, separated
1teaspoonblack pepper, separated
2tablespoonsunsalted butter
½yellow onion, finely diced
8ouncessliced button mushrooms
½cupsour cream
1teaspoon dried dill
Instructions
Cook the egg noodles according to package directions. Be sure to reserve ½ cup of the pasta water before straining.
Place a large skillet over medium-high heat and bring to temperature. Add the ground beef, breaking it apart with a wooden spoon and season with 1 teaspoon of Kosher salt and ½ teaspoon black pepper. Sauté, stirring often, until the meat is completely browned and cooked through, about 5 minutes.
Turn off the heat, and transfer the beef to a bowl using a slotted spoon and set aside. Be sure to wipe the sides of the pan clean of any grease drippings before returning to the heat.
Resume cooking over medium-high heat and the butter. Once the butter has melted, add the onion and mushrooms and sauté for 6 minutes, or until the mushrooms have cooked through.
Remove the pan from the heat once more and stir in the sour cream, dried dill, 1 teaspoon Kosher salt, and ½ teaspoon black pepper. Add the ground beef back to the mixture, along with the reserved pasta water and stir once more.
Serve the stroganoff over the cooked egg noodles and enjoy!
