Ingredients
3cupsfrozen broccoli florets
1 ½cupsfresh green beans, ends snipped and cut into thirds
9ouncesfresh cheese tortellini pasta (such as Buitoni)
1cupfrozen peas
3ouncesCheddar cheesecut into ¼" cubes
2tablespoonsItalian dressing
½teaspoonKosher saltoptional
Instructions
Add just under a ½" of water to a large saucepan, and place steamer basket inside of saucepan. If water comes over the steamer basket, remove and discard of water until the bottom of the steamer basket is no longer touching the surface of the water. Place over medium-low heat, and add the frozen broccoli. Cover with lid, and allow to steam for 12 minutes, or until the broccoli is tender enough to easily pierce with a fork. Remove the lid and set aside to cool.
Bring a large pot of water to a boil over high heat. Add green beans, pasta and peas to the boiling water and allow to cook for 5-6 minutes, or until green beans are tender, stirring occasionally. Strain the pasta and vegetables, and set aside to cool.
Once the pasta and vegetables have cooled, transfer to a large mixing bowl, and add the broccoli and the Cheddar cheese. Drizzle with Italian dressing, sprinkle with salt (if using) and toss until all of the ingredients are evenly coated. Serve right away, or store in an airtight container in the refrigerator for up to 4 days.
