Ingredients
1cuplong grain rice
1tablespoontomato paste
Juice of a lime
1cupfrozen mixed veggies(corn, carrots, and peas)
½teaspoonAncho chili powder
½teaspoonsmoked paprika
½teaspooncumin
1 ¼teaspoonKosher salt
2 ¼cupslow sodium beef broth
Instructions
Add all of the ingredients to the rice cooker and stir to combine.
Cook according to manufactuer's instructions or until the broth is fully absorbed into the rice. Fluff with a fork and allow to stand 5 minutes. Serve and enjoy!
