Ingredients
1cupunsalted butter
4ouncessemi-sweet chocolatefinely chopped
2cupsall-purpose flour
½cupof cocoa powder
2teaspoonsbaking soda
1teaspoonfine sea salt
1cupgranulated sugar
1large egg
1teaspoonpure vanilla extract
½cupdecorative sparkling sugaroptional
Instructions
Preheat the oven to 350° and have ready a sheet pan lined with either parchment paper or a silicone baking mat.
In a small saucepan over medium heat melt together butter and chocolate, stirring often. Remove from the heat as soon as chocolate has melted and set aside to cool.
In a medium-sized mixing bowl, whisk together flour, cocoa powder, baking soda and sea salt. Set aside until ready to use.
In the bowl of a stand mixer fitted with a paddle attachment, add the sugar and egg. Mix on medium-high speed for about 3 minutes. If you do not have a stand mixer, use a large mixing bowl and a handheld mixer. Add the vanilla extract and mix again. With the stand mixer on low, slowly drizzle in the melted butter and chocolate. Add the dry ingredients gradually, and mix until combined.
Have ready a small bowl of decorative sugar, if using. Roll a generous tablespoon worth of batter in the palm of your hand and press slightly to flatten. Roll the top in the decorative sugar and bake 10-12 minutes.
