2. Coat the Chicken

Add the chicken to a gallon-sized zip-top bag, followed by the marinade. Remove any excess air from bag, and seal. Massage the marinade onto each chicken briefly. We use the same method for our mustard-marinated smoked chicken legs, and it always works like a charm!

3. Let It Marinate

Place the bag on a small rimmed pan (or a baking dish) and marinate for at least 30 minutes or up to 4 hours. The baking dish will prevent any potential leaks from escaping the zip-top bag.

If marinating for 30 minutes, leave the chicken out at room temperature until ready to cook. If marinating for longer, transfer to the refrigerator.

4. Prep Before Cooking

Can you Marinate Chicken Overnight?

Marinating chicken overnight depends on the cut you're working with. The only chicken cuts you should marinate overnight are thighs and drumsticks. The fat within these cuts of meat makes them more forgiving, preventing the acid within marinades from turning the chicken mushy.

Breasts and tenders, on the other hand, are light in fat and do not have this extra barrier of protection. Do not marinate these cuts overnight. If you need to marinate overnight, cut the amount of acid in half.

Can you Freeze Chicken in Marinade?

Yes, you can freeze any cut of chicken in a marinade. In this scenario, the chicken actually marinates as it thaws.

How to Freeze Marinated Chicken

  1. Add raw chicken and marinade to a freezer-safe zip-top bag and label with a date.
  2. Place flat in the freezer for easy storage and freeze for up to 3 months.
  3. Thaw in the refrigerator overnight. I recommend placing the bag inside of a rimmed pan or baking dish to prevent the marinade from spilling in case of a bag leak.

How to Cook Marinated Chicken

Grill | This is by far the best method for cooking marinated chicken. The high heat caramelizes the chicken and adds smoky flavor, giving your chicken restaurant-worthy vibes.

Cast Iron Skillet | This is the best indoor method for marinated chicken. Pan-seared chicken gives you a beautiful golden crust, locking in all of those delicious juices.

Bake or Roast | The easiest of all the methods and the most hands-off way to cook marinated chicken. Thanks to the even heat, you're guaranteed juicy results.

Air Fryer | This is the quickest of all cooking methods and a simple way to get charred edges and a juicy interior.
