These Funfetti Cookies say party like no other cookie ever could! With festive rainbow sprinkles and a buttery, soft sugar cookie base, these cookies are as enjoyable to eat as they are to look at.

We've seen those recipes out there calling for boxed Funfetti cake mix, and we in no way, shape, or form approve. These cookies are so much better made from scratch, and with a dough this easy to make, there's no reason to go any other way! No need to chill or roll out the dough; they'll turn out soft and chewy without the extended to-do list!

Funfetti Cookies are a cinch to whip up for a crowd and literally feel like serving your guests happiness in handheld form. This recipe makes for a super fun and festive baking activity with kids, and is so perfect for serving at any party or get-together. Need multiple desserts for your gathering? HOW TO MAKE FUNFETTI COOKIES

To kick off your Funfetti Cookies, you'll begin by lining your baking sheets with parchment paper or a silicone baking mat and preheating your oven to 375°F.

Once that's out of the way, you can begin working with your dry ingredients. Whisk together all-purpose flour, baking powder, and salt. Be sure not to confuse your baking powder with baking soda. They are both chemical leaveners, but they do not act the same. It is very important for this recipe that you use baking powder, as it makes your cookies perfectly puffy.

Next, you'll move on to the wet ingredients. For your wet ingredients, you will need unsalted butter, granulated sugar, eggs, and vanilla. You will begin with the butter.

Creaming the butter and the sugar together gives these Funfetti Cookies a phenomenal light and fluffy texture!

It is important for this recipe that your butter is at room temperature, not too hot and not too cold. Room-temperature butter can be easily indented with a gentle poke of your finger. If your butter is too stiff or too runny, it cannot properly cream with the sugar.

Add the butter to either the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl. If you use a large mixing bowl, you'll want to have a handheld mixer on standby! Begin mixing the butter on medium-high speed, and continue to mix for about one minute. Then, slowly and gradually add in the granulated sugar, mixing all the while. Mix the butter and the sugar together for 2 to 3 minutes, until the mix appears light and fluffy!

Next, add the eggs one at a time, mixing well after each addition. Lastly, you'll add in the vanilla extract and mix once more.

Turn your mixer down to a low speed and gradually add in the dry ingredients. Mix until combined.

Now it's time to add the fun to these Funfetti Cookies! For this recipe, you will need approximately two cups of Jimmie rainbow sprinkles. One cup for mixing in the cookie dough and one cup for rolling the cookie dough in! 

Add about one cup of sprinkles to your cookie dough, and gently mix until combined. You can mix in the sprinkles by hand or with your mixer on low. Do not mix in the sprinkles on high speed, or they will break apart. Transfer the other cup of sprinkles to a small bowl.

Scoop about 2 tablespoons worth of dough and form into a round. Then, take the dough round and gently press the top and the sides of it into the reserved sprinkles.

Transfer to the baking sheet, placing each cookie about 2 inches apart so they don't bake into one another!

Bake the Funfetti Cookies for about 12 minutes, just until the bottom edges of the cookies begin to tinge with a golden brown color.

BEST SPRINKLES FOR FUNFETTI COOKIES

For this recipe, you will want to use those fun and festive colorful sprinkles we all know and love -- rainbow Jimmie sprinkles. What's the difference between a Jimmie and a sprinkle? Well, sprinkle is a broad term that encompasses pretty much all teeny-tiny bits of sugar that can be "sprinkled" over desserts and ice creams.

When bakers use the term jimmies, however, we are specifically referring to elongated, rod-shaped sprinkles. Of course, it depends on the brand, but Jimmie sprinkles often hold their shape and have minimal color spread when baked in the oven. We recommend using either Betty Crocker Parlor Sprinkles or Wilton Rainbow Jimmie Sprinkles, as both have the ability to hold up under the heat.

HOW TO STORE LEFTOVER FUNFETTI COOKIES

Your Funfetti Cookies can be keep at room temperature for up to 4 days if stored in an airtight container. 

Made too many? No worries! Funfetti Cookies will maintain their deliciousness for up to 3 months in the freezer. Just seal the cooled cookies in an airtight container or zip-top freezer-safe bag before freezing. They'll take about 20 minutes to thaw at room temperature, and then they'll be just as good as the day you made them.

If you're wanting to get ahead on party prep, you can also make the dough and then freeze it and bake it later! Just roll it into balls and store it in an airtight container, using pieces of wax paper to keep the layers separate. The dough can be frozen for up to 3 months, then you would allow it to sit out at room temperature for about 30 minutes (or until thawed), pack on those sprinkles, and bake as directed! Ingredients

FOR THE COOKIE:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 ¼ teaspoon fine sea salt
  • 1 ¼ cup unsalted butter room temperature
  • 1 ¼ cup granulated sugar

  • 2 teaspoons vanilla extract
  • 2 cups colored jimmies sprinkles, separated

Instructions

METHOD:

  • Preheat the oven to 375°F and prepare a baking sheet lined with parchment paper or a silicone baking mat.
  • In a medium-sized mixing bowl, whisk together the flour, baking powder, and salt. Set aside until ready to use.
  • Add the room-temperature butter to the bowl of a stand mixer fitted with a paddle attachment. Begin mixing on medium-high speed. If you do not have a stand mixer, use a large mixing bowl and a handheld beater. With the mixer running, slowly add the sugar and mix for about 2-3 minutes, until light and fluffy. Then, add the eggs one at a time, followed by the vanilla extract.
  • Turn the mixer down to low, and gradually add the dry ingredients. Mix until combined. Add 1 cup of sprinkles and mix once more. Add the remaining cup of sprinkles to a small bowl and set aside.
  • Scoop about 2 tablespoons worth of dough, and form into a round. Gently press the top and sides of the dough round into the sprinkles to adhere, and set them on the baking sheet (sprinkle-side up) spacing them each at least 2” apart.
  • Bake for 12 minutes and transfer to a wire rack to cool slightly. Serve and enjoy!
