Why This Recipe Works
The perfect homemade hamburger seasoning strikes a balance of flavors — flavors that enhance a burger patty without overwhelming it. This seasoning is the perfect blend of smoky, rich, and just a little kick without overpowering the ground meat. It's savory, bold, and so flavorful for crave-worthy burgers in every bite.

Coming from a family that's cooked hundreds of burgers for backyard parties, weeknight dinners, and casual get-togethers with friends, we've tested our fair share of seasonings. This specific mix is one we reach for every time and is our official go-to for serving a crowd, because it's consistently delicious, beyond simple, and always gets the best reviews from family and friends.
Ingredients for the Best Homemade Burger Seasoning
- Kosher salt | Basics like Kosher salt are best for even flavor distribution, making every bite its very best.
- Black pepper | Another basic, black pepper adds a sharp, warm kick that enhances the natural flavor of the beef.
- Onion powder + garlic powder | Onion powder and garlic powder add richness and great umami flavor.
- Paprika | Here's where the recipe gets really good. We tried the recipe with smoked paprika, but the spice was just a little overpowering. Regular paprika adds just the right amount of smoky depth without overpowering the beefy flavor of your burger.
- Chipotle powder | Chipotle powder is unexpected and such a game changer. It adds smoky heat without adding too much spice.
- Mustard powder | Mustard powder adds a little brightness and tang.
- Brown sugar | Last but not least, brown sugar may seem like an unusual ingredient in a burger seasoning, but it actually does a great deal for a burger patty (or breakfast sausage, too!). It balances the spice and salt and helps the patty get that gorgeous, caramelized crust.
Another great seasoning we love is our Pork Chop Seasoning--not limited only to pork chops!
How to Make Hamburger Seasoning
Add ingredients to an airtight container or jar and shake to combine. (I prefer glass containers to plastic.)

Store in a cool, dry, dark place for up to six months.
While you've got your DIY seasoning hat on, be sure to throw together an all-purpose seasoning and a meatloaf seasoning, too! Both are also great to have on hand alongside burger seasoning.
How to Season Burgers
Make sure burgers are thawed completely before adding seasoning.

This hamburger seasoning blend was made to season the exterior of burgers; do NOT add to the mix! Here's why: the salt will pull moisture from the interior of the patty, making it difficult for your burgers to sear. This rule still applies even if you opt for the air fryer instead of the grill.
Add 2 teaspoons of this homemade hamburger seasoning to both sides of the patty just before cooking.
