Never go on a hunt for a packet of Meatloaf Seasoning ever again! This homemade meatloaf seasoning is a quick and easy spice blend with only a few simple ingredients. It takes any and all meatloaf recipes to new heights of deliciousness.

Meatloaf Seasoning with meatloaf

In five minutes or less, you can add tons of flavor to your meatloaf mix, making every bite extra comforting and beyond yummy. This meatloaf seasoning is perfect in our Southern meatloaf and our super savory BBQ meatloaf, too. It can be made in big batches and stored in your cabinets for up to six months, meaning meatloaf on a whim just got a whole lot faster!

Seasoning for Meatloaf

  • Kosher Salt + Black Pepper | These are the basic building blocks for any great spice mix. Kosher salt is great for its large grain and pure flavor, and black pepper will add just the spice you need. Check out our prime rib seasoning for a way to elevate this dynamic duo.
  • Paprika | It adds a wonderful complex flavor of your meatloaf; it's got a mild, sweet, smoky flavor.
  • Ground Mustard | Sharp flavor and a little spicy--great for adding to savory, meaty dishes.
  • Garlic + Onion Powder | These spices are somewhat sweet but largely savory are renowned for instantaneous aromatic qualities to recipes. We use this dynamic duo in our House Seasoning and Chicken Seasoning.
  • Dried Thyme | Herby, woody, and oh-so-savory savory, this herb rounds out the other flavors.

How to Make Meatloaf Seasoning

Combine spices in a small bowl and mix to combine.

Make Ahead and Storage

Make Ahead | This recipe makes seasoning for one meatloaf, but that quantity can easily be adjusted for a larger batch of seasoning you can keep stored in the pantry. The recipe card below can do the math for you if you want to multiply the ingredients to make bigger batches.

To use the recipe card for quantity adjustments: Simply click the word "servings" above and increase that number to match the number of uses, and the spice quantities will automatically be adjusted.

Store | Seal and store in the pantry for up to six months. Store in a mason jar or hermetic jar. As long as it's airtight, it works. Be sure to label with a "use by" date. It will stay good in pantry for up to six months.

Note: Use about 3 tablespoons of meatloaf seasoning per meatloaf.

This recipe also works in our Italian meatloaf or baked meatballs for fantastic savory flavor!

How to Make Meatloaf

  • Heat the oven to 350°.
  • Mix the meatloaf base.
  • Add the ground beef and minced onion.
  • Transfer the mixture to a baking sheet and shape it into a loaf.
  • Make the glaze.
  • Add the glaze topping and bake for 30-35 minutes.

Allow the meatloaf to rest for 15 minutes, then serve and enjoy!

What to Serve with Meatloaf

Nothing says Southern quite like meatloaf served with mashed potatoes and green beans with a roll on the side, but you can totally change up the meatloaf meal game and serve it with shells and cheese and a house salad on the side.

Just about any vegetable pairs well with traditional meatloaf, so zucchini, asparagus, carrots, or crispy potatoes are guaranteed to be hits. Whip up a pan of homemade cornbread and call it good!

Meatloaf Seasoning

With the homemade Meatloaf Seasoning, you will never have to reach for a seasoning packet again. Kosher salt, pepper, garlic, onion, and dried thyme come together to bring savory to your meatloaf!

Ingredients

  • 2 teaspoons Kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons ground mustard
  • 1 teaspoon black pepper
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme

Instructions

  • Combine spices in a small bowl and mix to combine.

RECOMMENDED MEATLOAF RECIPE:

  • Add meatloaf seasoning ingredients to a large mixing bowl with a ½ cup of breadcrumbs. Add a ½ cup of milk and 1 large egg, 1 tablespoon of Worcestershire sauce and mix to combine. Add 2 pounds of ground beef and 1 minced onion. Mix to combine.
  • Shape into a skinny, narrow loaf on a rimmed sheet pan and top with ketchup glaze. Bake in preheated 350°F oven for 1 hour.
