Your mornings are about to be transformed by the most delicious, hearty Croissant Sandwich. This breakfast beauty is quick and easy enough to assemble for weekday mornings yet gourmet enough to dazzle weekend brunch guests.

Flaky, toasty croissants are layered with ham, cheesy scrambled eggs, and bacon, resulting in a savory, rich, and completely satisfying bite. As a working mom of two (combined with a decade of recipe development experience), I know the perfect formula for breakfast-time or brunch happiness.

Since putting together a star breakfast takes place first thing in the morning, the payoff needs to be greater than the effort. So, for the perfect croissant breakfast sandwich, texture and flavor are key. The scrambled eggs need to be creamy, the bacon crisp, and simple things like toasting the croissant will take an average sandwich from good to gourmet.

The Avocado Spread | This spread is so much more than sliced avocado. The lemon juice adds a bright pop of flavor that compliments the savory vibes of the sandwich in all the right ways.

Packed with Protein | There is truly no greater or healthier way to start the day than protein first thing. Not only does the recipe start with the perfectly cooked, creamy, scrambled eggs (probably the best you'll ever eat -- seriously, people comment on my scrambled eggs constantly), savory, smoky, thick-sliced ham and bacon--there's so much depth of flavor to this protein trio. It's beyond satisfying.

Designed for Efficiency | This recipe looks like a lot of steps, but every single one of them is either quick and simple or pretty hands off; everything is done in 30 minutes! For instance, while the bacon cooks itself in the oven (no more popping grease--yay), you'll knock out your scrambled eggs. The bacon comes out, croissants go in to toast, and it's the perfect amount of time to slam out a gorgeously creamy avocado spread.

Ingredients (+ Customization Options)

Croissants | Croissants are the ultimate bread choice for this breakfast sandwich thanks to their buttery, flaky layers and light texture. Sometimes, biscuits are used for similar sandwiches, but we like the added touch of luxury the croissants bring to the table. If a traditional breakfast sandwich is one of your favorites, hop right on over to our egg sandwich recipe. Top-level marks for both of these breakfast faves.

And if you're looking for a croissant dish on the sweeter side, chocolate croissants are king!

Scrambled Eggs | Our recipe calls for a layer of perfectly fluffy scrambled eggs. You can cook them in butter or avocado oil. I prefer avocado oil as it's less likely to burn. If you don't want cheesy eggs, feel free to omit the cheddar from the recipe.

Avocado Spread | This ingredient is optional but makes such a difference in the sandwich, adding both color and a touch of brightness, thanks to the lemon. If you don't care to make a spread for this sandwich, consider using tomato or another acidic ingredient to balance out the extra savory notes of the sandwich.

Pork | The croissant sandwich calls for a combination of both smoky, crispy bacon and juicy, thick-cut slices of deli ham. We use ham in our open-faced croque monsieur sandwiches as well, and let me tell you, that little protein addition can make all the difference. However, if you'd like to omit one or the other, feel free.

Spinach | This leafy green adds brightness, freshness, color, and crunch to the sandwich. Arugula is a great alternative, if you prefer a peppery, bold green.

How to Make Breakfast Croissant Sandwiches

Cook the Bacon | After you've preheated your oven to 400°F, lay your bacon strips down on a lined baking sheet. Bake for 15-20 minutes or until crisp to your liking. At the 15-minute mark, check for doneness. Remove from the oven; set aside. Then, as soon as the bacon is cool enough to handle, tear each piece in half.

Scramble the Eggs | While the bacon is in the oven, whisk the eggs, salt, and pepper in a mixing bowl until thoroughly mixed. Set aside.

Add your butter to a medium-sized, non-stick sauté pan over medium heat and allow to come to temperature. Pour in the egg mixture and don't touch it for about 30 seconds to 1 minute. As soon as the outside of the eggs looks opaque, bring the heat down to medium-low and add the cheese.

Grab your spatula and gently push the eggs toward the center of the pan, letting the runny parts flow to the edges. Keep repeating this until the eggs aren’t liquid anymore. Then fold them around so any last uncooked bits hit the pan and cook through. Once they’re how you like them, remove them from the heat and set aside.

Steps to cook cheesy scrambled eggs for Croissant Sandwiches

Toast the Croissants | When your bacon comes out of the oven, take the oven temp down to 350°F. Place the croissants cut side up on a baking sheet. Bake for 8-10 minutes, or until toasty how you like them. Remove from the oven and set aside.

Make the Avocado Spread | With the croissants in the oven getting all toasty, make your avocado spread. Add the green part of an avocado to the small bowl along with lemon juice and a generous pinch of salt. Grab a fork to mash until smooth.

Assemble the Sandwiches | To put these beauties together, add a generous smear of avocado spread to the bottom half of each croissant. Tear each slice of ham to fit the croissant, then top with scrambled eggs, spinach, and a crisscross of bacon slices. Add the top piece of croissant,

Croissant Sandwich

Ingredients

  • 4 croissants
  • 6 large eggs
  • ¼ teaspoon Kosher salt + a pinch, separated
  • generous pinch of black pepper
  • 2 tablespoons butter or avocado oil
  • ⅓ cup freshly grated mild cheddar cheese
  • 1 ripe Hass avocado
  • Juice of half a lemon
  • 4 slices of thick-sliced deli ham (sliced at a 2 or 3)
  • 1 cup baby spinach

Instructions

COOK THE BACON:

  • Preheat the oven to 400°F and have ready a large, rimmed baking sheet lined with nonstick aluminum foil.
  • Lay the bacon strips down on the baking sheet and bake for 15-20 minutes or until crisp to your liking. Check at the 15-minute mark for doneness. Remove from the oven and set aside. As soon as the bacon is cool enough to handle, tear each piece in half.

SCRAMBLE THE EGGS:

  • While the bacon is cooking, add eggs, salt, and pepper to a mixing bowl and whisk until thoroughly mixed. Set aside until ready to use.
  • Add the butter to a medium-sized, non-stick sauté pan over medium heat and allow to come to temperature. Pour in the egg mixture and allow to sit undisturbed for about 30 seconds to 1 minute. As soon as the outer ring of the eggs begins to look opaque, reduce the heat to medium-low and add the cheese.
  • Use a spatula to push the eggs toward the center, allowing the uncooked egg to flow over and spill outward. Continue with this process until the eggs are no longer in liquid form. Fold the eggs within the pan so that any uncooked portions make contact with the bottom of the saute pan until the eggs are done to your liking. Remove from the pan and set aside.

TOAST THE CROISSANTS:

  • As soon as the bacon comes out of the oven, reduce the heat to 350°F and lay down the croissants cut-side up on a baking sheet. Bake for 8-10 minutes, or until toasty to your liking. Remove from the oven and set aside.

MAKE THE AVOCADO SPREAD:

  • While the croissants are toasting, make the avocado spread. Add the flesh of an avocado to the small bowl along with lemon juice, and a generous pinch of salt. Use a fork to mash until smooth to your liking.

ASSEMBLE THE SANDWICHES:

  • To assemble, add a generous smear of avocado spread to the bottom half of each croissant. Tear each slice of ham to fit the croissant, then top with scrambled eggs, spinach and a criss-cross of bacon slices. Add the top piece of croissant, serve, and enjoy!
