Prosciutto Wrapped Asparagus

The internet has made asparagus wrapped in prosciutto overtly complicated, and we are not here for it. Instead, we're serving up a Prosciutto Wrapped Asparagus recipe that dishes out al dente, perfectly roasted asparagus, and crispy prosciutto with zero stress and easy assembly.

This is for sure a quick-fix side dish. It takes less than 15 minutes to assemble and doesn't require any popping pans of grease. Oh, and no individually wrapping stalks when you're getting ready to serve a crowd (who has time for that anyway?!). Nope, instead, we're bundling these beauties and putting the oven to work for us. The look and flavor are so amazing, you won't be missing a thing! These are perfect for holiday parties, brunches, or an at-home date night. Serve alongside perfectly cooked cast iron filets topped with a gorgonzola sauce and a side of crispy roasted potatoes for an impressive, no-stress dinner!

HOW TO PICK ASPARAGUS

When choosing asparagus for this recipe, it's best to go with a medium-sized stalk, not pencil thin, and not the super thick asparagus spears either.

To choose a healthy asparagus stalk, look for healthy purple tips and tight, firm stalks that snap when bent.

HOW TO MAKE PROSCIUTTO WRAPPED ASPARAGUS

The first thing you want to do is get your oven preheated. For this recipe, you want your oven good and hot; we're talking high heat here, people -- a whopping 450°F.

You also want to have ready a rimmed baking sheet lined with either parchment paper or a silicone baking mat to ensure that the prosciutto doesn't give you any trouble coming off the pan!

Now, it's time to prepare the asparagus. Take care to remove any tough or woody ends by snapping the asparagus ends right off. Not sure where to snap? Don't worry; it's not rocket science. All you have to do is hold the spear horizontally, and bend it to break!

You could also tackle this task the quick and easy way by laying the entire bunch down on the work surface, using your hand to bundle and keep the stalks stationary, and with a chef's knife, cutting about 3 inches off from the end.

Once you've taken care of those asparagus ends, it's time to add some oil and some flavor! Lay the asparagus on a work surface, and drizzle with olive oil. Then, we will simply season with kosher salt and black pepper. Next, toss all of the asparagus in the oil and seasoning until evenly coated.

Time to bring in the prosciutto! For this Prosciutto Wrapped Asparagus recipe, you will need thin slices of prosciutto. This is typically how they come packaged, but make sure, if you are ordering prosciutto from the deli, you tell them you want your prosciutto sliced paper thin! The thickness is significant because thicker prosciutto would take much longer to crisp up than thinly sliced prosciutto.

Note, you'll want to take care when handling the prosciutto. It is delicate and breaks easily.

Grab yourself 3 to 4 stalks of asparagus and one piece of prosciutto. Wrap your asparagus stalks tightly (yet, gently) and lay them down in a single layer on your prepared sheet pan.

Bake the Prosciutto Wrapped Asparagus for about 8-10 minutes or until the asparagus is tender to your liking and the prosciutto is crispy. Allow it to cool slightly, serve, and enjoy!

WANT TO AMP UP THE FLAVOR OF YOUR PROSCIUTTO WRAPPED ASPARAGUS?

We designed this recipe for minimum effort and maximum flavor. As is, your Proscuitto Wrapped Asparagus will turn out perfectly cooked and absolutely delicious. However, if you're wanting to serve this asparagus up with a bit more flare, we've got a few tricks up our sleeves.

You'll only need a few extra ingredients for this rendition of Prosciutto Wrapped Asparagus: lemon zest and Parmesan cheese.

As you're prepping the asparagus with oil, salt, and pepper, grate the zest of half a lemon over the asparagus. Then, toss as directed and move on to the wrapping!

The next addition goes down after the asparagus is out of the oven. Just before serving, finish off your dish with a sprinkle of freshly grated Parmesan cheese (about 2 tablespoons worth), a very light drizzle of high-quality olive oil, and a generous pinch of fresh ground black pepper.

These small changes to the recipe are fairly minor, only add about 5 whole extra minutes to your prep time, and are guaranteed to knock your dinner guests' socks off!

Ingredients

  • 1 bunch of asparagus tough ends removed
  • 1 tablespoon olive oil
  • ½ teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • 6 ounces (about 2 packages) thinly-sliced prosciutto

Instructions

  • Preheat oven to 450° and have ready a rimmed baking sheet lined with either parchment paper or a silicone baking mat.
  • Lay the asparagus out on a work surface and drizzle with olive oil. Sprinkle with salt and pepper and toss until well coated.
  • Gently, wrap 3-4 asparagus with a piece of prosciutto. The tighter you can get it, the better.
