We firmly believe (along with many other beef connoisseurs of the world) that the best prime rib rub requires only two ingredients and about one minute of your time. This recipe yields the best prime rib roast you've ever tasted. Guaranteed.

The Best Prime Rib Seasoning

Christmas dinner is meant to be extra special. It's where we take food everyone loves but elevate it to make it holiday-worthy. It's dishes like salmon with dill sauce, a gorgeous pork tenderloin, or even shrimp alfredo that do that well.

Still, no Christmas dish is more special than the one and only prime rib roast with au jus. Of course, you want your prime rib to be flavored and cooked to absolute perfection -- no one wants to mess up such an expensive cut of meat.

No one wants to waste it either. That's why we created the ultimate prime rib sandwich recipe, but that one's for later. As for now, let's get back to prime rib basics.

Prime Rib Seasoning

Have you stopped to think about why prime rib roast is so expensive? It's because this particular cut of beef is of superior flavor and quality. You pay top dollar because of its beautiful marbling, which yields the best of the best when it comes to flavor.

And this is not a flavor you mask. It's one you enhance.

The only thing you need to make a superior prime rib rub this year is Kosher salt and course-ground black pepper. It's as simple as that, and this tried-and-true (literally timeless) seasoning combination yields the most delicious bite of prime rib you or anyone else have ever tasted.

Use this same blend on beef tenderloin, cast iron filets, or T-bone steak.

Here's What You Need

  • Kosher salt (we prefer Morton's brand)
  • Black peppercorns
  • Pepper grinder

Pepper grinders come in many different shapes and forms and can be as automatic or manual as you need them. We use an electric spice grinder (aka coffee bean grinder) to keep freshly ground pepper in our home on a regular basis. You can typically find them for less than $20, and they'll whir up a batch of freshly ground pepper in less than two minutes.

You can also buy peppercorns in a jar equipped with a grinder (found in the spice section of your grocery store near the pepper) or use a pepper mill. Pepper mills are great for those of you who love entertaining and making a splash at the dinner table come presentation time.

Prime Rib Rub Ingredients

Kosher Salt | Kosher salt is much more forgiving that finer grain salts, particularly when it comes to beef. It has superior flavor and sits perfectly a top beef. You are far less likely to oversalt with Kosher salt. It is aboslutely perfect for enhancing (and not overpowering) prime rib roast.

Freshly Ground Pepper | When it comes to prime rib seasoning, freshly ground pepper is the way to go. While it may require a little extra work on your part, grinding peppercorns releases essential oils and intensifies those warm, spicy notes. Trust us when we say, freshly ground pepper versus pepper that's been sitting in a bottle for who knows how long are not the same product.

How to Season Prime Rib

This prime rib recipe could not be any simpler. You need 2 parts Kosher salt and 1 part freshly ground pepper.

Grind up the pepper, mix with Kosher salt, and slather it all over your prime rib roast.

Then, you'll get it into every single nook and cranny, rubbing and massaging it into the beef, taking care not leaving one square inch untouched.

Ingredients

  • ¼ cup Kosher salt
  • 2 tablespoons freshly ground black pepper

Instructions

  • Combine ingredients in a small bowl and mix to combine.
  • Store for up to 6 months in an airtight container, or use right away on your favorite prime rib recipe, rubbing the seasoning all over every nook and cranny of the beef.
  • It is ok if excess seasoning falls to work surface or roasting pan.

This prime rib seasoning recipe works particularly well for an 8 pound prime rib roast.
